Banana Bread French Toast with Peanut Cream and Bacon Bits

Upgrade banana bread to a new level - warm, moist, balanced with peanut butter and bacon, this is one french toast breakfast all kids will be begging you to remake!

Ingredients
  

Peanut Butter Cream
  • 3/4 cup whipping cream cold
  • 1/2 cup peanut butter smooth or chunky
French Toast
  • 1 loaf of Banana Bread (sliced into 3/4" slices)
  • 4 eggs
  • 1/2 cup milk whole
  • 1 tablespoon white sugar
Garnish
  • 1/3 cup crispy bacon bits
  • Maple Syrup
  • 2 tablespoons chopped peanuts

Method
 

Peanut Butter Cream
  1. In a medium size bowl, whip cold whipping cream until soft peaks.
  2. Add peanut butter and whip until fully combined. Set aside in fridge.
French Toast
  1. Pre-warm frying pan
  2. In a shallow dish, mix eggs, milk and sugar together.
  3. Dip or dredge banana bread in egg mixture, flip and dredge other side of banana bread.
  4. Place dredged banana bread onto hot frying pan until browned. Flip and brown other side of banana bread.
  5. Serve with maple syrup, large dollop of peanut butter cream, crispy bacon bits and chopped peanuts.
