Lime Cilantro Cauliflower Rice

A light, healthy and flavorful accompaniment to any meal, Lime Cilantro Cauliflower Rice will have you asking for more!

Ingredients
  

  • 1 head of cauliflower
  • 1 clove garlic minced
  • ½ red pepper diced
  • ½ teaspoon table salt
  • 1 tablespoon vegetable oil
  • 2 +2 teaspoons fresh lime juice
  • Zest of 1 lime
  • ¼ cup fresh cilantro minced

Equipment

  • Large frying pan

Method
 

  1. Do not rinse or wash cauliflower or rice will be too wet. Cut cauliflower florets into large chunks.
  2. In a food processor pulse half of the cauliflower until rice like. Pulse the remaining cauliflower into rice.
  3. On medium heat in a medium sized frying pan, add vegetable oil.
  4. When oil is shimmering, add garlic until browned about 2 minutes.
  5. Add diced red pepper to garlic on frying pan for 2 minutes to start cooking.
  6. Add riced cauliflower to frying pan. Add 2 teaspoons lime juice and salt. Stir.
  7. Cover and cook for 5 - 8 minutes until cauliflower rice is tender. Remove from heat.
  8. Add remaining 2 teaspoons lime juice. Stir in lime zest and cilantro.
  9. Add salt and pepper to taste. Enjoy!
